Double Chocolate Muffins and Peanut Butter and Chocolate Brownies!

Today, I decided to show you the Double Chocolate Muffins that I made on Wednesday and also the Peanut Butter and Chocolate Brownies that I made on Friday. I haven't baked in a while and it's something that I love to do. These muffins and brownies were super easy and quick to do so there's no complications or difficulties in today's recipes! I hope you enjoy this post and I hope that it inspires you to bake some delicious treats too!

Double Chocolate Muffins:

Ingredients:

250g self raising flour
1 tsp vanilla extract
175g caster sugar
1 large egg
250ml milk
2 tsp baking powder
90ml vegetable oil
2 tbsp cocoa powder
150g chocolate chips
Muffin cases


Method:

Preheat your oven to 200c and start by filling a muffin tray with the muffin cases! I started by using 12, but you may need more depending on the size of your cases!

The first thing that you need to do is weigh out all of your dry ingredients and add them into a large bowl. This includes, flour, caster sugar, baking powder, cocoa powder and 3/4 of the chocolate chips! You then need to start mixing all of these together gently.

Next, add all of your liquid ingredients into another large bowl so that you can mix all of these together. This includes; vanilla extract, egg, milk and the vegetable oil.

Once you have mixed both bowls separately, you can then add the liquid ingredients to the dry ingredients and mix them all together until the mixture becomes smooth.

Then, spoon the mixture into the cases as evenly as possible! You can then use the rest of your chocolate chips to sprinkle some on top of the mixture in the cases. The recipe says that it makes 12, but I was able to fill 16 muffin cases.

Bake in the oven for around 20 minutes or until the muffins have risen and are nice and springy.

Once you have left the muffins to cool down, you have the option to dust with icing sugar for a perfect finish!





Peanut Butter and Chocolate Brownies:

Ingredients:

Small amount of butter, to grease
150g dark chocolate (broken up)
100g butter
215g caster sugar
75g plain flour
2 tbsp cocoa powder
2 eggs
200g crunchy peanut butter

Baking Paper

Method:

The first thing that you need to do is preheat your oven to 160c. Then use the butter to grease a pan, the recipe that I looked at recommends a 16 x 26cm slab pan. I don't think it needs to be exact though! Next, line the base and the two long sides of the pan with baking paper.

Place the chocolate and the butter in a large heatproof bowl and put this over a saucepan which is half filled with simmering water. Make sure that the bowl doesn't touch the water! Then, use a metal spoon to stir, until  the chocolate melts and the mixture is smooth.

Next, combine the sugar, flour and cocoa powder in a bowl. Add the chcolate mixture and eggs and stir it all together until its all combined. Then, pour your mixture into the pan that you prepared at the start.

Spoon the peanut butter over the brownie mixture and use a knife to create swirls.

Bake in the oven for 35-40 minutes!

Once the brownies have cooled down, cut into slices and enjoy!







That's it! These method's are so so simple and really quick to do. The muffins look really impressive and taste great too! The brownies look amazing with the swirl in them, and are delicious!
